Kokossahne: 50 g Kokosraspeln 225 ml Wasser 1 EL Süßungsmittel 100 g Kokosöl (geschmolzen) 1 EL Agar Agar
Zubereitung: 1. Die Kokosraspeln über Nacht in 225 ml Wasser einweichen. 2. Für den Boden die Mandeln in der Küchenmaschine zermahlen. 3. Die restlichen Zutaten für den Boden hinzugeben, zu einem Teig verarbeiten und in die eingefettete Kuchenform geben. 4. Die Erdbeeren auf dem Kuchen verteilen. 5. Für die Kokossahne die Kokosflocken mit dem Einweichwasser im Mixer pürieren. Die Masse durch einen Nussmilchbeutel geben und gut auspressen. 6. Die Kokosmilch in den Mixer geben. Dann das Agar Agar, das Kokosöl und das gewünschte Süßungsmittel hinzugeben und alles mixen. 7. Die fertige Kokossahne 1 h in den Kühlschrank stellen. Anschließend über den Kuchenboden gießen.
